Homemade mayonnaise and other creations

I don't actually like mayonnaise, but for some reason I thought that maybe homemade mayonnaise would be different - unfortunately my taste buds didn't agree. I was making a beet and potato salad with grated carrot that called for homemade mayonnaise to be folded into it after the salad had marinated in a vinaigrette overnight. I made the mayonnaise in my food processor following Julia Child's recipe and it was really cool. It worked perfectly and was kind of like an edible science project, where you add two things together in a very precise manner and get something totally different! Ok, I guess all baking is like that, but you don't have to cook mayonnaise so you get instant results. Did you know there's a little pin hole in most food processors that is specifically for dripping oil in a thin stream - this is ideal for mayonnaise making! Anyhow, I ended up liking the salad better without the mayonnaise and found myself with 2 1/2 cups of mayonnaise to use up... somehow ; )

A friend mentioned that she had made a chocolate cake that called for mayonnaise so I tested out the recipe. It turned out great and I made a peanut butter icing for the cake. This is only the third icing I have made, and I obviously need some work on my spreading techniques!

This is not actually the beet and potato salad, but this was another winter salad I made with grated raw beet, grated carrot, sunflower sprouts, buckwheat sprouts, alfalfa and various other little sprouts, and raisins. The dressing was made from tahini and apple cider vinegar, garlic and ginger with maybe a little bit of olive oil mixed in.

I've been trying out lots of new recipes recently, trying to get out my same-old recipes rut, as delicious as they may be. A couple of recent out of the ordinary things that I've made are: corn chowder (which was delicious with the local corn that Rick blanched and cut off the cobs to freeze), oat milk (more on that later), bagels (a great activity with friends), partridgeberry pie (my first pastry) and a couple of other new cookie and bar recipes which are good for school and work snacks. And now this blog, well that's new too. I'm not too sure how it will go, but I'm going to give it a shot. I think at least it will be a good way for me to keep track of what I've been up to ; )

  1. I think that mayo is one of those products you either love, or simply don't. We use it on sandwiches quite regularly.
